Text on pages linked to from index page

I have a site that deals with a number of categories and products. Too much to cover on the index page. My product pages are html and have their own titles, description, etc. The category pages do not. As near as I can tell the category pages show the same source code as the index page. Each category gives me unlimited space for text. I am wondering if the text on the category pages will be treated the same as if on the index page since they are linked? I would like to keep my index page uncluttered if possible.

I don't know how to set up a site map, but will try to find out how. You are saying that a site map will allow me to use text on these category pages so I can implement more text and key words for the index page source code? What is the difference between a site map and linking to pages within my site from the index page?
