Seemed like a bit of an obvious question, but couldn’t find the answer anywhere.

If I use the word “help” for instance as a keyword, does this mean it has relevancy if someone enters “helper” or “helping” into a search? Better explained, would I need to put “help, helper, helping” into my keywords, or would help suffice as all three words contain it?

The META tag "Keywords" is only used by the SE to determine what sort of category to index your page. The tag furthermore helps adware browsers like [URL=http://www.slettes.dk/redirect_to/?url_name=http://www.opera.com/]Opera[/URL] and adware toolbars to determine what sort of ads should be presented to people when visiting your web page.

The major Search Engine's SERP's (Search Engine Result Pages) are composed according to actual content (i.e. text) on your web page. Keywords are only secondary to real content.

There is no relevance since keywords tags aren't used for search queries - as I explained, and as you already did know.

Absolute matches get more value and rank higher, however stemmed keywords get a nice boost.
