Using styles in HTML email

Is it possible to place styles in the head of an HTML-based email that is inserted into and sent from Outlook? Inline styles work fine, but styles in the head aren’t recognized?

I receive HTML email where style sheets are employed all of the time and am able to view them perfectly from within Outlook.
