Remove individual variables from a session?

I was wondering if it is possible to remove individual variables from a session. I have a series of forms where I’m storing the values of the forms in the session so the form will display the last values inputted when there are errors so the user doesn’t have to retype them. The reason I have to do this is because I have all the form processing scripts in a separate folder.
