How can I make page change for the iPhone like gmail does?

Hello everyone, I want to write a website that stays the same in normal browsers but displays differently for the iPhone. Not just zooming in or changing pixel sizes but the layout to. The same way gmail does, like it is loading a different html file. Does any one know how to do that? I’m not asking for a code only where to start, and what makes the page know its on an iPhone?
