PHP Form Validator & Sanitizer Function

I have about 12 $_POST variables that I need to sanitize and validate, including phone and email, and I would like to create a function that I could somehow pass all those variables into and have the function go through them and spit them back out again.

My question is, what would be the easiest and most convenient way to pass those into a function? If as an array, how would it go looping through the variables and know what to validate with what method?
