Changing template inheritance

I used to work for a company that set up their websites in a way I really liked. You built out a template of the site, and wherever the main content area was, you just put %content% – then your individual pages had an include statement at the top, and then just <p> and <h1> tags- just the content for that page, and it would automatically fill into the template in the area designated by the %content% marker. I’ve read up on template inheritance a little and see that it’s a similar idea, except I really like being able to use %content% instead of the pageblock code. I realize it isn’t a huge difference, but I’m trying to learn more and if someone could tell me how this was done, I would appreciate it.
