In one of the SEO tutorials I’ve been reading, it talks about how you should always use text rather than images because search engines couldn’t read the image. Is there no way to get around this? I thought that was what alt and title attributes were for.

If your page only has graphical content and no text it means its "content" according to search engine will be tiny, hence the page's likeliness to appear in SERPs will be much lower.
"Alt" attributes are very important indeed, but cannot replace too much text, it woud loose its interest.
No one but google can know that I'm nearly sure that if the proportion of text in Alt is too high compared to the actual text, their value descreases.
