how to design an object oriented application ?

Hi.
I have a basic knowledge about classes. I know how to use the features of them. What i don’t know is how to design an application that classes. I have read something about UML, but i still don’t know.

I’m having hard trouble choosing the classes for a simple quiz system.

Does anyone know a book where there is a good example of analyzing and designing a PHP web application, or a web application in general. Or an open-source project that have a class diagram in is documentation.
